Lemon Cookies

These Lemon Cookies are a Jamie Oliver recipe and incredibly simple and oh so scrumdidleumtiouis! (Scrumptious!)


Little ones will love making these. In the past I have had problems with some cookies keeping their cookie cutter shape, however these remain their shape beautifully whilst cooking! YAY!


What you will need:


Ingredients:

* 125g Butter at room temperature

* 100g Sugar * 200g Plain Flour

* Zest of 2 Lemons

* 1 Egg

* 1/4 tsp baking powder * Pinch of sea salt

* 3 Tbsp of demerara Sugar (Light Brown Sugar)

* Flour for dusting surface


Utensils:

* Free standing mixer

* Zester

* Cling Wrap (Film)

* Cookie Cutter

* Rolling Pin

*Grease Proof Paper

* Baking Tray

* Spatula

* Wire Rack



Directions:

In a free standing mixer, put in butter and sugar and mix until creamy.


Whilst waiting, grate the lemon.


Add egg and mix until light and fluffy.


Then place in the flour, baking powder, lemon zest and pinch of salt.


Mix until the ingredients form a ball.



Place cling wrap over the bowl and pop it in the refrigerator for two hours.


Preheat oven 350F/180C.


Roll out dough to 1cm thick and cut out your fun shapes. Place on a baking sheet with grease proof paper.


Sprinkle with the demerara Sugar.



Cook in the oven for 10-12 mins.

Lay out on a cooling rack and then enjoy! Yum!
